The answer lies in a process called glycation. It's a bit complex but fascinating! So, let's break it down.
When we consume sugar, it enters our bloodstream. If there's more sugar than our cells need for energy, it binds to proteins.
This process is called glycation. It forms molecules called advanced glycation end products (ironically abbreviated as AGEs). These AGEs do exactly what their name suggests — they age us.
AGEs are particularly harmful to collagen and elastin, two proteins crucial for keeping our skin firm, plump, and youthful.
